Confidence in the safety of eggs is a longstanding trait among British consumers, with many routinely buying them in batches and storing them in their refrigerators. However, recent events have prompted a renewed examination of how safe this staple food actually is. A salmonella outbreak, attributed to salmonella enteritidis, has raised concerns, with 207 reported cases since August of the previous year, leading to significant health complications for many individuals.
According to the UK Health Security Agency (UKHSA), 38 per cent of those affected required hospital treatment, with some developing bloodstream infections and a tragic case resulting in a death. Whole genome sequencing has revealed that these cases are linked to a common origin.
Eggs have once again come under the spotlight, following years of advancements in salmonella control. Investigations into the outbreak show a notable link between the cases and consumption patterns: 95 out of 114 individuals who were interviewed reported having eaten meals outside their homes shortly before getting sick. It has been noted that five food businesses were associated with the outbreak and were supplied eggs potentially from multiple sources, including importers. Importantly, no direct connection was found to British-produced eggs or poultry, suggesting that domestic consumers may not be at risk from the eggs in their fridges. However, eggs served in restaurants and cafés may pose a greater hazard.
Interestingly, a significant portion of egg consumption in the UK does not involve whole eggs. Many eggs are processed into various products such as sauces, pastries, dressings, cakes, and ready meals. As Paul Wigley, a professor at Bristol Veterinary School, explained on BBC Radio 4’s Today programme, while individual consumers may buy a small number of eggs, caterers often purchase them in large quantities, making it difficult to determine their exact origins.
The history of egg safety in Britain has been shaped by a serious salmonella crisis in the 1980s, which saw thousands of reported cases and outbreaks linked to eggs. “We’ve come a long way since then through the use of vaccination, through surveillance and detecting salmonella in flocks,” said Wigley. Today, salmonella occurrences in UK-produced Lion Mark eggs are considered extremely rare due to rigorous testing and controls.
Under the national salmonella control programme, commercial laying flocks in Britain undergo testing for the virus at least every 15 weeks. Consequently, British supermarket eggs are generally viewed as very low risk; however, this assurance is not universally applicable to all eggs entering the food supply. The British Lion scheme, established in 1998, necessitates salmonella vaccination and regular audits for participating producers, thereby ensuring a higher level of food safety.
Mark Williams, chair of the British Egg Industry Council, proudly refers to the British Lion scheme as “the gold standard for egg production anywhere in the world.” He elaborates, stating that approximately two-thirds of the eggs consumed in the UK are sold as shell eggs at retail outlets. Around 20 per cent are used in food service settings including restaurants and schools, while 16 per cent are processed into egg products.
Once eggs are removed from their shells, their origins become less transparent to consumers. Industrial kitchens and food manufacturers often use liquid eggs, dried eggs, and other processed forms that do not clearly indicate where the eggs came from. The Food Standards Agency (FSA) highlights that more than 60 per cent of imported eggs and egg products between 2019 and 2024 are not whole eggs but instead processed products.
While the “Lion mark” on shell eggs indicates a level of safety, it does not provide any guarantee about the egg content of processed dishes. Notably, processing can sometimes enhance egg safety. Most commercial egg products undergo pasteurisation, which effectively eliminates salmonella. Furthermore, imported eggs are subject to controls and certifications, although these mechanisms rely on multi-level checks instead of blanket testing for every consignment.
Issues can also arise within catering settings, where the FSA has issued cautions about “pooling” eggs—cracking multiple eggs together before use—as this can contribute to the spread of bacteria if any individual egg is contaminated. For this reason, the FSA recommends using assured eggs for raw or lightly cooked dishes that will be served to vulnerable populations.
Once individuals begin to exhibit symptoms of illness, investigators work backwards through supply chains to identify the source of contamination. Advanced genetic analysis enables health officials to connect seemingly unrelated cases by examining the shared genetic material of the bacteria involved. Wigley asserts that genomic analysis suggests that the recent outbreak stems from imported eggs, although concrete evidence of the exact source has yet to be established.
Unlike British shell eggs that are clearly marked with a producer code, the provenance of imported eggs remains less straightforward. There are instances where trade records specify the dispatching country of egg products rather than the originating nation of the eggs themselves. This ambiguity has led Williams to advocate for stricter checks at customs, suggesting that imported egg shipments might be held until they are certified free of salmonella.
For consumers contemplating their breakfast choices, there is a reassuring conclusion: currently, there is no indication that British-produced eggs are implicated. Eggs bearing the Lion Mark and equivalent assurances present a safer option, especially when served soft or runny. Thorough cooking offers another layer of protection against salmonella risks. Nonetheless, when it comes to egg ingredients in restaurant meals, the journey from farm to fork is often obscured, leaving diners unaware of the egg’s origins. As health officials continue their investigative work, the methods of unpackaging these supply chains remain critical in ensuring public safety.

Additionally, food businesses using loose eggs should follow strict hygiene practices, avoiding pooling methods that increase cross-contamination risks, as highlighted by FSA recommendations.
Key regulations potentially breached include the Food Safety Act 1990 and the General Food Law Regulation (EC) 178/2002, which demand safe food production and traceability. Implementing these improvements could significantly mitigate the risk of future outbreaks and protect public health effectively.
